No Knead Bread For Stay Home Filled Days



How life has changed for everyone in the world since my last post.  Unbelievable. We are living through extraordinarily difficult times.
For our family, we lost Lee's dad, Eddie,  who was only days away from his 94th birthday.  He was a beautiful man, very wise and very content with living a simple life.  We are all grateful he was taken from us days before this Corona Virus madness set it.  I don't even want to think about what would have happened if he contracted the disease and we weren't able to get to spend time with him in his last days.



Schools have closed early, we are not leaving the house, except for grocery shopping and work.  I'd use hand sanitiser if I could find it but thankfully I found some Turkish lemon cologne with 80% alcohol to use instead.  The world has gone mad.. I was laughing at people 3 weeks ago when they went crazy about toilet paper, as Lee always stocked up and wasn't due to be placed on our shopping list until now...YIKES!!  I haven't seen the stuff for weeks in the grocery stores.  I went into Aldi a couple of weeks ago to get some tissues as Evangeline was sneezing and found two middle aged women pulling at each other's clothes and hair.  One of the women had placed the last 3 packs in her huge bag and the other woman went on the attack. As they where fighting a man casually walked by and grabbed a pack from her bag.   I'm ashamed to say I stood back and laughed at them.  Needless to say that was weeks ago which now feels like a year ago.  

We're seeing what is happening in Italy and it's devastating.  So when I see fwits in droves on Bondi Beach and people cramming into supermarkets and not adhering to social distance rules I freak out slightly.  What my best friend who works at a Uni told me today was the last straw.  She had a couple international students approaching her with their demands and telling her that they have just flown in from OS. My bestie has a heart of gold and would do anything for anyone.  She is a teddy bear....However she, like me, is a bull.  Star sign and attitude when faced with morons.  I would have loved to be a fly on the wall to see her when this particular student was not adhering to social distance etiquette and then going NUTS whilst asking the student why she hasn't self isolated for 14 days as is required.  People need to take this seriously.  We are all going stir crazy only after a few days.  I can't stop thinking about Julian Assange who has not been in the real world for years.  How he has survived it for so long with the US and UK threats on top of it is astonishing.

I digress.... so how are we filling in our days?  Cooking of course, arts and crafts, homework, Netflix and Disney Plus.  Today we made bread to accompany our Greek baked Gigantes...  So super easy and delicious.

NO KNEAD BREAD - READY IN 2 HOURS

500gr all purpose flour (I used Tuerong Farm’s Red French flour)
350ml water warm
10gr yeast
10gr salt
½ tbs honey

Mix all dry ingredients together in large bowl and make a well.

Add honey to warm water, mix until diluted and pour into the flour mixture.  

Mix all ingredients together with a spatula.  Dough should be very sticky.  

Leave in a warm spot covered with cling film for about 1 hour.

Heat your oven to 250° and place your cast iron dutch oven. Leave it in there for at least 15 minutes or until your bread dough is ready to be baked.

Add a handful of flour to your clean bench and carefully place your raised dough on it.  

Pat out with your hands and fold it each end in until they meet in the middle.. Flatten out again and repeat process.   


If the mixture is too sticky just sprinkle a little bit flour onto it.  

Shape your dough into a ball and place onto some baking paper.  

Carefully take out the hot dutch oven and place your baking paper and bread dough into it.  Make a slit on to the top of dough with knife.   Cover with lid and bake for about 30 minutes.  This allows the bread to steam slightly making for a very crunchy crust.

At 30 minutes remove the lid, lower the temperature to 200° remove the baking paper and continue baking for a further 20 minutes. Serve with lashings of butter.
