Quick Tuna Pasta


When I want to cook something that is fast, delicious and with a bit of a kick this is what I cook.  Most ingredients are usually in my pantry and fridge so it is a no brainer to add to our weekly menu.

Ingredients
2 cans diced tomatoes
3 anchovies in olive oil chopped
3 garlic cloves finely chopped
1/2 onion finely chopped
425g tuna 
chilli flakes (to your liking)
1- 2 tbs capers
1/2 cup pitted kalamata olives
1/4 cup olive oil
1 packet spaghetti
1/2 cup chopped parsley and extra for garnish
zest of 1 lemon
juice of 1/2 lemon
salt to taste

Lightly saute onion, garlic and anchovies in olive oil.   Add tomatoes, capers, olives and chilli flakes and simmer for a couple of minutes.  If using tuna in spring water drain the liquid and carefully break up tuna and add to the sauce along with lemon zest.  At this point taste and adjust salt and chilli to your liking. Squeeze in lemon juice and add parsley.

Boil pasta until cooked and toss pasta in the sauce.   Garnish with parsley and dig in .
