Asia Minor breakfast
All but one of my grandparents where born in Turkey. My pappou was from Imbros, my other pappou from Adrianoupoli now Edirne and my giagia from Smirni....Therefore the food they ate was greatly influenced by the ingredients, recipes etc of the region. Here is my interpretation of eggs and yoghurt...my all time favourite breakfast...Preferably accompanied by some sliced avocado and smoked salmon…
Ingredients
muffins
poached eggs
greek yoghurt
burnt butter
paprika
Whilst toasting your muffins, poach your eggs. In another small saucepan add butter and slightly brown. To assemble place eggs on muffins, add a dollop of greek yoghurt on both eggs (not too much!) pour the butter over the yoghurt and sprinkle with paprika...... Easy!
